Decouverte du Sushi
Découverte du Sushi (English: "Discovery of Sushi") is a Pan-European sushi making competition.
Sushi is an emblem of Japanese cuisine and its rising global popularity has resulted in a large number of initiatives and events around the world.
Découverte du Sushi was founded in 2003 and takes place every two years in January in Lyon, France, under the Sirha (International Exhibition of Food, Hotel and Food). It usually features representatives from about a dozen countries.[1]
To be eligible for this contest, one must be studying in a European hospitality school, be under the age of 22 years on the day of the competition, and not be of Japanese nationality.
The competition features three steps, under the watchful eye of a jury of professionals:
- 1. Nigiri Express Speed: prepare, under a time limit, a maximum amount of nigiri
- 2. Sushi Nippon Technicality: prepare a plate of traditional nigiri and maki
- 3. European Roll Creativity: invent an original recipe of maki (roll) with ingredients from one's home country
The history of winning schools is as follows:[2]
- 2003 : École Supérieure de Cuisine Française Ferrandi (Paris, France)
- 2005 : Lycée Hôtelier Paul Augier (Nice, France)
- 2007 : Szkola Policealna nr13 (Warsaw, Poland)
- 2009 : Lycée des Métiers de l'Hôtellerie et du Tourisme de Grenoble (France)
The 2009 competition awarded a podium place to France, Germany and Belgium, showing at the same time somewhat of a female supremacy, with women Lidwine Ah-Kiem and Anna Dressel winning both the Golden Sushi and Silver Sushi awards.[3] The "Discovery of Sushi" is growing fast, and plans to open for its fifth edition in 2011 a category reserved for European professional sushi chefs.
