Chicken inasal, commonly known as Inasal, is chicken marinated in a mixture of lime, pepper, vinegar and annato then grilled over hot coals while basted with the marinade. It is served with rice, vinegar (Sinamak or white vinegar) and soy sauce. A common dish in the Western Visayas region of the Philippines, it is a specialty in Bacolod City, Negros Occidental, as well as in neighboring cities and provinces. Many restaurant chains are famous for serving inasal like Bacolod Chicken Inasal and Mang Inasal originated in Iloilo City.
