Kashk e bademjan

Kashk e bademjan is an Iranian and Azerbaijani dish that literally translates as “kashk and eggplant”.[1][2] Can be an appetizer or main dish.[3]

The spelling of the name of this dish varies in English and can include; Kashke bademjan, Kashk bademjan.

The recipe has variations such as caramelized onions, roasted nuts, herbs, spices.[4]
